Week 7 – Princess Goes Healthy

I could give you the usual babble – all about my intentions of cooking and blah, blah, blah. I try and that’s all I got. Like everyone else, life gets busy. I’m not one of these people who, really, enjoys the busy. I’m the girl who would rather be kicking daisies in the outfield.

The intent is here, this week. I’ll see how that goes.

Sunday – Sloppy Joe’s  (I did add some green chilies to mine) and side salad

It was yummy. Not very sophisticated but it brings back lots of childhood memories. Who needs manwich when you probably have most of the ingredients in your cabinet?

Monday – the husband went to go hit golf balls, so I just grilled some sandwiches for me and the boy!

Simplicity and comfort really is my favorite!

Tuesday – CLUSTERPLUCK day! For me, at least. Work, hair appointment (you all know how I feel about those!) and small group. Yes, you’ll be proud. I still made dinner for the family.  I made the PW’s Hot and Spicy Beef Drip. No, no pics because I had to let the husband take over. Apparently, it didn’t keep all the liquid it was supposed to. My new cast iron dutch oven gets WAY hot. I need to keep that, in mind, next time. But, they both really liked it and took down a 2.5# chuck roast!

Wednesday – Glazed Salmon and Asparagus

Week 7 Wednesday

Look at that beauty! I just whipped up some salmon glaze (soy, brown sugar, red pepper flakes, pepper) and roasted the asparagus in olive oil, salt and pepper. Simple and awesome! (Oh and I had whole wheat cous-cous that I forgot to make!)

Thursday – BBQ Chicken, with grilled onions, mushrooms and cheese, Broccoli and Baked Potato

Week 7 Thursday

 

Note – the kids and I had a baked potato. Mike had a baked sweet potato.

And, with that, do you realize what happened this week? I cooked 5 days! Woohoo!

Tomorrow, I’m going to a fish fry and Saturday, I’m going to a friend’s house for Fish Tacos (yum!) FISHY weekend, baby!

    Do you know that your photos look almost to good to be real? The salmon and the chicken looked luscious! I used to think I was a good cook–but, darling, you far surpass your mom in this category. (Now you can say something like “I learned a lot from you, mom. :-)

      Thanks and I, obviously, learned a lot from you! We spent a lot of time, in the kitchen, together!
